Cabbage and Potato Stew

  • 2 large onions diced
  • 4 cloves garlic sliced
  • ½ pound bacon diced
  • Sprig thyme
  • Juice of one lemon
  • 4 tablespoons marmalade
  • 1 small head cabbage sliced
  • 1 pound new potatoes quartered
 

Sweat onions in ½ cup olive oil for 5 minutes until very soft

Add bacon, thyme and garlic and continue to cook until the onions have melted

Cover with a tight fitting lid on low heat, stirring occasionally

Add lemon juice, marmalade and cabbage to the pot and cook until the cabbage is soft Add ½ cup water to make sure the bottom of the pot does not scorch

Cover and continue to cook the cabbage for another 15 minutes stirring occasionally

Add potatoes and stir into the cabbage mixture

Cover and cook for another 5 minutes

Remember to season as you add ingredients
