Toasted Quinoa, Fruit and Nut Wrap

  • 1 cup toasted and quinoa cooked
  • 1 cup basmati rice cooked
  • 1 cup diced apricot
  • 1 cup toasted pecan pieces
  • ½ cup crumbled feta cheese
  • ¼ cup pumpkin seed oil
  • ¼ cup blood orange vinegar
 

Dry toast quinoa in a large skillet until they begin to pop

Place in a sauce pot and add 1 and ¼ cup orange juice

Bring to a boil and then simmer on low for 20 minutes

Cook basmati rice in 1¼ cups of water

Combine grains, nuts, cheese and dried fruit

Add oil and vinegar

Season to taste

Serve as a side dish or use as a filling in wraps
