Aloo Gobi

  • 3 russet potatoes peeled and cubed
  • 1 head cauliflower cored and cut into florettes
  • 2 medium onions diced
  • ¼ cup curry powder
  • Olive oil
  • 1 bunch cilantro chopped including stems
  • 1 teaspoon grated ginger
  • 2 cloves garlic sliced
  • 1 can diced tomato
 

    Fry onions in olive oil over medium heat until golden brown

    Add sliced garlic, ginger and chopped cilantro to pot

    Cook briefly then add curry powder and diced tomato

    Mix well and coat spices with onion and tomato mixture

    Cover and cook over low heat for approximately 5 minutes

    Add and stir in potato and cauliflower

    Cook covered slightly for approximately 45 minutes
